Zucchini Recipes: Zucchini Brownies

If you know me very well, you know I love brownies.  These fudgy brownies to be exact.  So while coming up with zucchini recipes, of course I experimented to come up with a zucchini brownie recipe. 

Zucchini Brownies

1/2 cup butter, melted
1 1/2 cups sucanat or rapadura
1/3 cup cocoa
1 cup shredded zucchini
1 egg
2 cups whole wheat flour

Mix butter, sucanat and cocoa.  Stir in zucchini and egg.  Gradually mix in flour until well combined.  Pour batter into a 9×13 inch pan.  Bake in a 350° oven for 25 minutes or until a toothpick inserted into the middle comes out clean.

Since I’m getting vegetable in every moist, chocolaty bite…do you think I can justify eating twice as many?

    if I don’t have sucanat could I use regular sugar? would there be a measurement difference?

    Yep, you can use regular sugar or brown sugar.

    Yes, I’ve been looking forward to this recipe too! I didn’t plant squash this year, but all kinds of people have been giving us squash from their highly productive gardens. This is a great way to hide squash for the non-squash lover. We’ve been using them in smoothies too though; I wouldn’t believe it was there if I didn’t see myself put it in!

    Inspired by all the zucchini recipes here and the need to use what I pick from my garden, I made zucchini pancakes. They were delicious. I used my favorite whole wheat pancake recipe, and added 1 cup fresh picked blueberries and 1 cup freshly grated zucchini. Everyone loved them until I told them it had zucchini in it, to which my husband replied “don’t ever do that again”. :(
    I’m thinking he meant don’t ever tell him that it’s in there, right? I mean my family had a green vege for breakfast, what can be better then that?

    Hi Laura,

    I made your brownie recipe tonight and they unfortunately didn’t get rave reviews. :( Bummer! They were lacking in chocolate flavor is what I think it was. I bake with WW flour a lot so I don’t think that was it. I used brown sugar instead of rapadura since I didn’t have any. Do you think adding more cocoa would have helped? They are ok to me—but definitely not real chocolatey. My husband just poured some chocolatey concoction he made for frosting over the top of them to “fix” them. :/ Dontcha love husbands? :) Anyway, I just thought I would let you know in case you have any other advice. I appreciate your website so much!

    I made these last night. They are not near as pretty as yours! My husband and I were a little weary when we tasted the batter, but once we got a baked, center piece…YUMM. This is a keeper for me!

    Thanks! I did these as cookies. Only modification (that i am aware of…I also don’t measure ingredients and am NOT a perfectionist) was to add 1/3c chocolate chips and 1/3c white chips. Bake 350 10 mins. Cool. Delicious!!! I was going to do brownies, but the batter was so thick I thought they would be just as good made into cookies!

    AMAZING! Yumminess!!! :) I didn’t want to have them on the counter so I cut them into small 1″ cubes and froze them in baggies. Well it didn’t help because we found they are fabulous right out of the freezer too!!! They don’t get crunchy, but chewy and YUM-O!!! Sooooo sooooo good!!!

    thanks for a great recipe! great as is or also add an extra egg and some baking powder, drop by HEAPING tablespoonfuls onto a cookie sheet, 325 oven, 10-15 minutes and wonderful puffy chocolatey cookies perfect for whoopie pies or ice cream sandwiches :)
