Pizza Casserole

Pizza Casserole  1/2 pound ground beef
1 small onion, chopped (or 3 Tablespoons dry minced onions)
2 cups pizza sauce*
1 cup water
1- 8 ounce package whole wheat pasta – any shape will do
Sea salt
4 ounces sliced pepperoni
8 ounces cheese, whatever is your favorite (mozzarella, cheddar, colby jack…)
optional:
1 small can black olives, sliced
fresh sliced mushrooms
1 green pepper, choppedBrown hamburger meat and onion in a large pot.  Once the meat is fully cooked, pour your pizza sauce and water into the pot. Bring this to a boil, then stir in the pasta. Salt well. Boil until pasta is tender. Stir in pepperoni.  Add olives, peppers and mushrooms if desired. Pour into a casserole dish. Top with cheese. Bake uncovered in a 350 degree oven for 25 minutes or until the cheese is melted and slightly browned. Here’s how I make my own pizza sauce.

2 cups tomato sauce
2 teasoon dried basil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/8 teaspoon sea salt

And if you really want to be lazy efficient, skip the casserole dish part, leave the whole thing in the big pot, top with cheese and let the cheese melt right on the stove top.  Make a salad and you’re good to go.
