
I want to thank you all for making our month of the Funky Fresh Kitchen so much fun!! I’m a little sad that it’s ending. Ah, but there will still be more fun recipes and giveaways and homemaking ideas in the weeks to come. I still have several Crock Pot Recipes that I didn’t have a chance to post in September. Gotta work those in soon!

I love the funky fresh kitchen as a whole. I think what I have appreciated the most is the reminder to make ahead to get ahead. I do really well before school starts then come about this time, my jars are empty, my freezer meals are dwindling etc just when harvest is coming on and I need the quick meals the most. Thank you for all your wonderful help Laura.

I’ve enjoyed it all! But my favorite part was the challenge to make things ahead of time. Having things made in advance for breakfast helps our mornings go so much smoother, and keeps us from eating cereal. Thank you for all of the challenges, I hope the rest of your soccer seasons go well! :-)
It has been nice to have a kind of guideline. I mean, we can try to be purposeful about eating vegetables and throwing out the junk we know we shouldn’t keep in out pantries, but it’s nice to do it then “shout it from the rooftops” so to speak that we’re taking steps to improve our family’s health and the quality of our lives. We do it everyday, in some manner or another, but it’s nice to tell someone that we did!

Well, I will give my self a D- for most of the challenges, but I did work on my kitchen and things are looking a little better. As for eating more healthfully, that’s being taken care of a baby step at a time. But I haven’t given up, and that is a huge plus. Thank you for doing this, Laura!

Love the funky fresh challenges. We were already eating healthier but reminders are always nice. I don’t have a lot of spare time, but have found that by taking a few hours and making things ahead to put in the freezer we save quite a bit of money and don’t eat out as much. It’s also soooo much better for us. Thanks Laura!

I thought about making your cheesebruger mac over the weekend and its on on menu. I just got my first shipment from traditions can’t wait to try palm shortening. Planning on making pop tarts hopefully tomorrow. I have to much to do today ( I worked all weekend and so its time to play catch up with housework and laundry.).

I’ve been in a meal-planning funk lately, so this week I’ve decided to simply follow your meal plans.
So far everything has been great, and my husband just might be your newest fan. :)
I have one problem, though, and it’s one I always have. My whole wheat baked goods (pancakes and zucchini bread) are dense and gummy. I just can’t get much of a rise out of them. What am I doing wrong?
The first thing I check is yeast. Is is getting killed by too hot of
liquids or is the liquid not hot enough and the yeast is not being
activated??? Otherwise, I would say use a slight amount less flour. Hope that helps!
Honestly? My favorite thing? Reusing your menu ideas! And cleaning out my refrigerator to find several jars of homemade grape jelly that I needed to use – and a crockpot meatball recipe in which to use it! Thanks a bunch!

First time here! Love the recipes! I will be keeping my 6 week old granddaughter beginning Oct 30 and hope to help them by preparing dinner a couple of times per week while there. Since I am basically by myself Mon-Fri (hub is a trucker), It will be plenty for me also! Thanks a lot!
