Tonight for High School Huddle, I made three big dishes full of Creamy Chicken and Rice Casserole. I also made a big whole wheat chocolate sheet cake plus 24 cupcakes.
Funny story (or maybe boring story, whichever way you want to look at it): As I was planning tonight’s huddle meal (for 35 people), I consulted my high schooler to see what he thought I should serve with the chicken and rice. Because he has two hollow legs, he suggested that rolls would be good, but I got overwhelmed with that because I was already making cakes and casseroles. Brilliant child that he is, my son said, “Maybe you could just buy some rolls this time.” Oh duh. I forget these things are an option. Therefore, everything else is homemade, but I bought rolls to feed the group tonight. This afternoon, instead of baking rolls, I’m going to take a nap. I like this plan. ;)

Easy noodle stir fry with broccoli and carrots, grapes
Huddle – Creamy chicken and rice casserole, green beans, homemade dinner rolls, whole wheat chocolate sheet cake and cupcakes with fudge frosting

Smart decision on the nap over the rolls. Funny too b/c I opted to by rolls for company tonight too rather than try to make some. I don’t think anyone will mind, esp once they get a look at that yummy chocolate cake!

Laura, it is wonderful that you get to spend time with your son and other teens in your home. My husband and I, along with our teenage son, recently started a “cell group” – a 10 week study – with snacks, of course. Our group is really small as we live in a small town and don’t have many young people in the highschool/college & career age group in our church… so I’ve had twinges of jealousy over your big groups. However, by stepping out in faith, in leading this group, we have been blessed. It is great fun learning and growing alongside our son and such a privilege. Perhaps one of the greatest gifts has simply been the fact that my husband and I are in this together.

I was SO happy to see that someone else eats applecrisp for breakfast too! It is a regular breakfast item for my son and I…apples, honey, fresh brown rice flour, butter and cinnamon; can’t get much healthier than that!! Most people can’t believe we eat iit for breakfast though…

I just had to share, because this was hilarious. I was reading this post with my 17mo son on my lap, and when he saw the picture of the chocolate cake, he touched his finger to the screen and then brought it to his mouth and licked it…and then did it again and again and again! I think he approved, even if just in his imagination. :)

And now a hilarious story for you: I was reading this and chuckled, so told my husband about it. EXCEPT that I unknowingly said “17 year old on his mother’s lap” instead of 17 MONTH old. That information changes the story just a little bit. :)

It is funny when we get so used to making bread the thought of buying it kinda just leaves our minds. I have been so busy I had not had time for baking and finally my Hubby said “can we just buy a little bread at the store?” It was a duh moment for me.

Ok that was just cruel showing the picture of all those chocolate cupcakes! I gained 20lbs just looking at them. The pumpkin choc. chip muffins sound good. We made choc. chip zucchini bread last week with applesauce instead of too much sugar and oil AND added sweet potatoes! They came out super moist.

Right, I just do straight apples and my family loves it! I use a variety of apples, depending on what I can get my hands on from local apple trees. My favorite it Empire, because the skins are so red, making for such a pretty pink colored sauce!
