Flour Free Peanut Butter Cookies
I often have the privilege of taking meals to friends who have just had a new baby. I love taking meals to people, but I really love holding the new babies when I get there. :)
My most recent new-baby-meal was delivered to a family that must avoid gluten. I enjoyed the challenge it posed to come up with an entire meal that was completely gluten free.
What I discovered through this challenge was that while I talk a lot about grains and grain mills and making bread…I also have quite a nice collection of recipes that are gluten free. I was excited to discover this and decided to make a Quick Click Gluten Free Resource Page on my site for those of you who either must eat a gluten free diet, or have opportunity to cook for those who do.

This is great! I have to eat gluten free, and it can be a challenge. I have found that I can use most of your recipes and substitute the wheat flour with Domata Living Flour. This brand substitutes cup for cup.

Here’s the GF menu that I took for the new baby. It’s pretty good for nursing mothers too! I did use a Betty Crocker GF cake mix because I didn’t want to buy different types of flour that I wouldn’t use again…
Anyway, the big hit is the Triple Dill Potato Salad.

I ate GF for awhile because my baby, whom I am still nursing, was allergic to wheat and dairy. She’s still allergic to dairy and I’m always looking for new recipes to try. Could you do a post on dairy free recipes sometime?

We’ve been GF for a little over 3 years now… at first it was a huge challenge, now we are settled into a routine. I’m still always on the lookout for new recipes to try.
For those who are dairy intolerant, we use the following substitutes:
MimiCreme (available in the fridge section at Whole Foods)
Nut, Soy, Rice or Coconut Milks
Soy or Coconut Yogurt
Coconut Oil or Extra Virgin Olive Oil (to replace all butters, oils, shortenings).

You’ll definitely be interested in knowing about the Grain-Free Gourmet Cookbook series (www.grainfreegourmet.com). Really delicious (and easy, creative) recipes. Many call for Almond Flour, which is 100% gluten-free, and very nutritious. Make sure to use the finest-ground almond flour (the best I know of comes from JK Gourmet (www.jkgourmet.com). Well priced and very powdery texture. Some yummy sample recipes can be downloaded right from these sites.

Just so you know, oats actually ARE gluten free. There just tends to be a lot of cross contamination between oats and wheat so those avoiding gluten should buy certified gluten free oats. Thanks for all the recipes in one spot, that’s very helpful!

First of all, props to you for actually taking the time to find out about your friends’ needs, researching them and working around them! The typical casserole or lasagna is like a plate of death to us and I still get a lot of blank stares when I try to gently explain this. So in a word, you’re awesome :)
My only word of caution when cooking for celiac families in a non-gluten free kitchen is that many celiacs can’t even handle eating something that’s been cooked in the same pan as something with gluten. Generally glassware is ok, but metal is not…just something to check on in the future.

Some of them are a little more involved (especially the baked items) but for those of you reading this who keep lots of different gf flours around, they’re relatively easy to do! Thanks for thinking of all of us with gluten free diets. To complicate things further, many, many of also have to be dairy free.
