Cornbread and Cornbread Muffins
By1 cup cornmeal
1 cup whole wheat flour
1 t. baking powder
1 t. salt
2 eggs
2 T. honey
¼ cup melted butter
1 cup buttermilk
Stir together dry ingredients. Add eggs, honey, butter and buttermilk. Stir until just mixed. Spoon batter into 12 muffin baking cups. Bake at 400 degrees for 20 minutes.
For Cornbread, spread batter into a buttered 9×9 inch baking pan. Bake at 400 degrees for 20 minutes.













Made your cornbread recipe tonight. It was excellent and the honey really worked. I am so used to making sweet cornbread with sugar and am glad I now have a healthy version that my family loved.

I came by to see if you had a recipe for cornbread. Of course you do! I’m off to make it, I am sure it won’t disappoint, just like the other recipes I have tried of yours. Just want you to know I am thankful for you and your site!

No, to soak corn meal, you use lime water and I haven’t learned about this yet. I don’t imagine it would be hard, but I just haven’t taken the time to learn.
