Five women friends and I were standing around after church Wednesday night talking about and planning our upcoming Super Bowl party. If you could have listened in on our conversation, you may have rolled your eyes. Or maybe you would have shrugged along with us?
“What time does the game start?” “What channel is it on?” “Who’s playing this year?”
Clearly, we are a well informed group of ladies, always keeping up with the latest trends and world events.
One of the girls jumped in excitedly with, “No wait. I’ve got this one.” Then she told us not just one, but both of the teams playing. Very impressive. I can’t for the life of me remember what she said now. I was just in awe of the fact that one of us actually knew.
We should have stopped talking right that minute, or at least began to focus on the food part of our planning. But no. Instead we had to discuss where we thought the teams were from. Why? Why would we do that?
It would appear that we don’t know our football geography very well. I’m not going to rat anybody out, but somebody thought the Steelers were from California.
(Just so you know, in case you are also going to a Super Bowl party, the Steelers aren’t…from California. There is no end to the helpful information you can learn while reading this blog. I am always glad to be of service.)
Finally my friends and I moved on to territory we are well informed about: FOOD.
My pregnant friend who was helping to plan the party suggested hinted BEGGED that someone should really make “that seven layer chip dip thing”. Hey, I’ll make anything for my pregnant friend, since she finally figured out something that sounds good.
In addition to the dip, I’m planning on taking something else fun (suggestions???) in that above pictured football dish someone loaned me.
And I could do a Swag Search to find a recipe for Seven Layer Chip Dip Thingy. But you all are so smart and have so many fun ideas…I decided to just ask you.
What seven layers should I layer? Meat or no meat? Onions or no onions? Never mind. I don’t think she’ll want onions. But she does want avocado. (Don’t you love it when I think out loud?)
I’m afraid with all of your answers I’ll end up with a Twelve Layer Chip Dip Thingy. That will probably be okay though, won’t it? We will, after all, be needing a large container of dip while we visit in the background watch all the commercials thoroughly enjoy the game.

1)Refried beans
2)Guacamole
3)Sour cream, mayonnaise, and taco seasoning mixed together
4)Shredded cheese
5)Diced green chiles
6)Diced tomatoes
7)Diced olives
Incidentally, this was one of the first “meals” my husband made for me :)
I’ve occasionally seen green onions sprinkled on the top – but have never heard of meat being involved.

Hmm. Well last Sunday for my contribution to the snack table I made up a taco dip in the little crockpot. It was refried beans (dry pintos soaked according to NT, cooked slowly, then “refried” with some drippings and salt and mashed.), leftover taco filling (which contains green chillis), cheese, sour cream, and Muir Glen organic medium salsa. So basically I took our Mexican night leftovers, stirred them together and called it a dip. It was very popular!

I just found out today on one of the tv shows I watch that you can cut several hundred calories by making black bean dip homemade (take cooked black beans adn puree them with a splash lemon juice) instead of refried beans. Use Greek Yogurt in place of sour cream, use skim milk cheese and chunks of avocade. Although Guacamole isn’t that bad for you, this part only cuts a few calories. It actually looked better than the traditional. I am going to start this way everytime.

As a born and bred only a few miles from Green Bay gal I am SHOCKED and OUTRAGED that you didn’t know that the Packers are in the Superbowl! They are the only community owned team in the league and the first 6th seed to ever make it to the big game. They are not your typical football team and they are about to win their 4th Superbowl in team history…because Aaron Rodgers gets to wear his comfortable shoes since the game is played in a dome. Yes, that is a real news story from here in Wisconsin. How could you not know these things?!?!?!? And (believe it or not) our priest will actually say Go Packers at the end of mass on Sunday. In fact I wouldn’t be totally shocked to hear him pray for them this week…it is the big game after all.
Now who played last year I have no idea (or the year before that, or the year before that, etc), but I remember loving many commercials :)
As for food, homemade pizza, potato skins, guacamole and chips, veggies and dip, and whatever else I decide to whip up at the last minute. We are probably staying home because of babies needing to get to bed, but we do have a party invite if we change our mind.

hot spinach and artichoke dip. I’ve made it a couple of times for a
girl’s nite out. Everyone loved it! I serve it with tortilla chips.

It is just a party of 2 at our house – just me and my husband and I have no idea who is playing. :-) I was going to do the usual chili, Fritos and Ginger Ale but then read in the food section of our paper of a suggested menu of Brunswick stew, cole slaw and corn bread. Spinach Artichoke Dip 1 pkg frozen chopped spinach (defrost and drain really good) 1 can artichoke hearts (drained and chopped) 1 cup mayonaise, 1 cup shredded parmasen cheese, 2 cups shredded mozzarella cheese, 1 tsp minced garlic. Mix and bake at 350 degress for 20-30 minutes, or till golden brown.

We are giant Steeler fans here in northern West Virginia. So this is what I suggested to my friend who’s husband is a huge football fan (while she, too, is just thinking about the food). Steeler Salsa–use black beans, black olives, yellow tomatoes, yellow bell peppers, yellow corn, the whites of scallions and garlic. Add the usual salsa stuff– cilantro, lime, salt. And be sure to serve with YELLOW corn chips. She was thrilled, and I’m sure her husband will be quite touched/amused with her effort!

Since I am always working Super Bowl, I manage a Domino’s Pizza, we will be having a party there. Busy day for us. All three managers bring in a few different dishes for the employees to enjoy during rushes. I also bring in my t.v. so we don’t miss the game. It helps get the employees to work that day. I will be making a fruit tray, deviled eggs, cheese tray with crackers, and a super bowl cake. I make a 13 x 9 cake, dye my white icing green and make the whole cake like the football field. Add white lines. I usually make each end of the cake with the logo of the two teams that are playing. Waiting for the cake to cool now so I can icing it. Hopefully will have some pics up soon.

1) guac or avocadoes mashed w/ a little mayo, lemon juice, salt & pepper (i always question the addition of mayo, but it makes it a little creamier)

I start with a layer of mashed avacodo mixed with a little sour cream and salsa. Then I put a layer of homemade mashed beans. Add a layer of sour cream with taco seasoning mixed in. Then layers of veggies. I use tomatoes, green onions, and olives and then top with cheese. I also like to brown some beef, add some salsa and cheese with the meat to a crock pot and that is our nacho dip. Both are yummy and man friendly as well and child friendly. Serve with your favorite tortilla chips:)

We are going to a SB party @ a friend’s. Now everyone there will be rooting for the Packers so Nathan and I are going to wear black and gold and bring our snacks on black napkins/gold (plastic) platters. Somebody has to bring some balance to the party! *giggle* We really don’t have a preference, we are from IA who do not have any professional team and so default to all things Chicago. For the last few years I’ve made Chocolate Chip Cookie Dough Dip (not really dough) you can do a Swag search, but it’s mainly cream cheese, butter, powdered sugar, vanilla and mini chocolate chips then use graham crackers, pretzels, vanilla wafers or something comparable to dip in it.
One year I made it into the shape of a foot ball and used extra chips to make the laces on the ball. Hubby loved it :)

Here’s the recipe I have used before. I wasn’t crazy about using canned refried beans, but maybe you have a homemade way to make those.
Ingredients
• 1 (16 ounce) can refried beans
• 1 (1.25 ounce) package taco seasoning mix
• 1 large tomato, seeded and chopped
• 1 cup guacamole
• 1 cup sour cream, room temperature
• 1 cup shredded sharp Cheddar cheese
• 1/2 cup chopped green onions
• 1/4 cup chopped black olives
Directions
Spread refried beans in the bottom of a (1-quart) shallow edged serving dish . Layer the diced tomatoes over the beans, mix taco seasoning into the sour cream, layer the sour cream over the tomatoes, and the guacamole over the sour cream. Sprinkle the entire layered dip with cheddar cheese, followed by green onion and finishing it off with a layer of black olives. Cover and refrigerate until ready to serve.

Well, I may be the only one slightly excited about the Superbowl here – Go Packers!! My 7-layer dip is about the same more or less than everyone elses – but I pick off the tomatoes on my plate :)
I’m bringing mini pizzas on toasted homemade sourdough bread. I cut the slices into four squares, brush with olive oil, toast in oven for a bit (400-ish degrees), top with pizza stuff and stick back in the oven for a bit until cheese is melted. These were a HUGE hit at a Christmas party this year.

I don’t make 7 layer dip, so I can’t help you there. But I’m bringing some queso dip and chips to a friend’s party. Velveeta, Jimmy Dean sausage fried up, Rotel (tomatoes and green chilies), Cream of Mushroom soup, and a splash of milk all mixed up in the crockpot and turned into deliciousness. Yummy! Not healthy in the slightest, but still yummy. Unless you forget to turn the crockpot down from High and burn the heck out of it. Not that I’ve ever done that of course. (-; I’m also thinking of making some kind of dessert, but I don’t know what yet.

7-ish layer dip (slightly healthier and hidden veggie version)
1) fat-free refried beans with 1/3 taco seasoning mixed in
2) fat-free sour cream with the rest of the taco seasoning mixed in
3) guacamole (just smushed avocados with lime juice and maybe a hint of garlic powder)
4) salsa (completely cover guacamole to keep it green)
5) chopped fresh baby spinach
6) grated cheese
7) I don’t include 7th but some add chives or olives – at least on top they are easy to pick off.

We actually watch the “puppy bowl” on animal planet channel. That seems to go over with the kids more than football does and as a bonus, it’s over by 7pm so the kids don’t have to stay up late on a school night.
I’m going to be making “dipping dinner” which is a bread bowl filled with a mixture of onion soup mix and cream cheese and baked until a cheese cake like consistancy.
As for my 7 layer dip, I do 1) green onions 2) black olives 3) sour cream 4) tomatoes 5)guacamole 6) monterey jack cheese 7) refried beans or seasoned ground beef depending on what mood I’m in all served on a bed of lettuce.

I just stuffed a ton of jalapeno peppers. With a mix of cream cheese, italian or breakfast sausage and a bit of red pepper flakes. Cook in a 400 degree oven for 20-25 mins. I could eat those all day.
They would be a great appetizer to take.

Here in San Antonio, TX, our menu will definitely include 7 Layer Dip (or 8 or 9!) Pretty much all of the above listed items from other posts… AND you MUST also have ‘QUESO’ – Velveeta Cheese (this is technically a ‘plastic’ perhaps, and not a food? But, it’s delicious in this dip!) Melt in small crockpot or pan on stove on low/med heat, add a can or two of Rotel with only some of the juice drained out, mix! When melted and yummy, stir well and spoon over tortilla chips!! Some folks add a can of no-beans Texas Chili to the cheese dip, some don’t. Fabulous either way!

It’s a little late now, but I use Pioneer Woman’s recipe for layered dip, and it’s the best I’ve ever had.

6. Grated Cheddar or Monterey Jack Cheese

I almost always leave off the olives (blech) and the cilantro goes on only when I have some fresh available. I’ve made it with salsa as one layer before, and decided never again (too runny/messy). I just serve it in a bowl on the side.
