I hear from so many people that they “wish they did a better job with meal planning” and that “meal planning is such a struggle.” And it’s not just menu planning that is a struggle. It’s figuring out a grocery list. Ugh, how many eggs will you need, anyway?

I usually pick menus 2 days before I shop, then I look at all the recipes and check ingredients the day before I shop. Then the 3rd day, I shop. I HATE the whole process. Trying to make things gluten-free, filling enough for my 5’9″, size 14 feet, age 13 son, not too spicy for my 4 & 5 yr old girls, making sure we have enough chicken broth in the freezer for whatever recipes, and do we have time to make more if we need it? And my son is SICK of muffins, but those are my favorite to make, portion control, plus I’m a better baker than cook. Trying to balance chicken, beef, pork, fish, not have too complicated recipes – ie an easy main dish with a more complicated side dish or vice-versa. My husband does most dinner cooking, and he is pretty good at punting if I forgot an ingredient, making do, but all in all, the whole process is very hard for me. I also try to make sure meals don’t have too many calories/fat/salt/sugar, and I try to substitute for eggs whenever I can because my husband has high cholesterol, and we’d really like for him to be able to get off his medicine, but he won’t exercise, so I’m trying to do as much as I can with diet (ie oatmeal, few eggs), and I’m doing gluten-free, even though the rest of the family isn’t…
And not too many veggies – my 3 kids balk @ about anything other than salad, and that is just very simple iceberg lettuce. We do have zucchini once in a while (with complaints), as well as broccoli about once a week (again with complaints). We have green beans, but lots of complaints there too. Can’t make anyone happy!
