Chocolate Chip Cookie Bars (Low Sugar, Whole Grain)
- 1 cup melted butter (2 sticks)
- ½ cup brown sugar or sucanat
- 2 eggs
- ¼ teaspoon baking soda
- ¼ teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 cup whole grain flour (I use freshly ground soft white wheat)
- ¼ cup mini chocolate chips
- Stir together melted butter and brown sugar.
- Add eggs, baking soda, salt, and vanilla, stirring well.
- Stir in flour until well combined.
- Fold in chocolate chips.
- Spread dough into an 8x8 inch baking dish.
- Bake in a 350 degree oven for 20-25 minutes or until golden brown.
- Allow bars to cool for 10 minutes before cutting and serving.
