Easy Flourless Pumpkin Muffins
- 2 cups creamy almond butter
- 15-ounces pumpkin puree
- 3 eggs
- ½ cup sucanat or brown sugar
- 1 teaspoon baking powder
- 2 teaspoons Pumpkin Spice OR 1 teaspoon ground cloves, 1 teaspoon cinnamon, and ½ teaspoon nutmeg
- Blend all ingredients together in a blender or with a hand mixer until smooth.
- Scoop batter into 18 paper-lined muffin tins.
- Bake in a 400 degree oven for 20 minutes or until golden brown.
