Low Sugar Chocolate Fudge Cookies

- 1 cup melted butter
- ½ cup sucanat or brown sugar
- ⅓ cup unsweetened cocoa powder
- 2 eggs
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 2⅓ cups whole wheat pastry flour (give or take)
- Stir together melted butter, sucanat, and cocoa powder.
- Add eggs, baking powder, and vanilla, mixing well.
- Mix in flour until your dough has reached a nice consistency (moist but not runny).
- If you've added all the flour and the dough is still too runny, add a little more or chill the dough in the refrigerator for 30 minutes to an hour.
- Scoop 1" sized cookie dough balls onto a cookie sheet.
- Bake in a 350° oven for about 10 minutes.
