I decided not to wait until dinner time to make that roast I forgot to put into the crock-pot yesterday. I made it for lunch today instead because I felt the need for a Leg-o-Lamb. (Yes, we love all varieties of Legos around here.)
And then, because I was trying to make the morning easy…I skipped the potatoes and threw green beans right in the crock-pot with the meat, onions and carrots. Best. Lunch. Ever.
And also the easiest.
I just wanted to be sure you knew that we are eating quite well, Azure Standard order forgotten and all. Not that you were losing sleep over it. And really…I know that you really don’t care about seeing my luncheon roast as much as you really just want to see pictures of my scary storage room.
Tonight. I promise.

I was out and about so I had a hodge-podge of greek yogurt with honey, trail mix, and a gluten free rice krispie-type bar :)

I always throw green beans on top (with the carrots, potatoes, and onions). If you don’t stir it after they go in its like they steam!!! So yummy!

I made homemade hash browns with turkey sausage and eggs mixed together, and some shredded raw white cheddar on top. Then we had toast from homemade multi-grain bread with organic strawberry preserves. YUMMY!!!

Today (like most days) I had a delicious green drink. It’s more of an applesauce consistency. It contains 1/2 lemon, 1/2 lime, an orange (all with peel) a banana, kale, spinach, collard greens, parsley, cilantro & some water. (it makes 3 servings) with a side or chickpeas.

I haven’t eaten since yesterday, fasting for our Seder dinner with friends tonight and praying for my relationship with my husband to be better. Looks yummy though, never thought about using green beans before!

My inlaws left sliced lunchmeat after their visit this weekend, so the girls and I ate sandwiches. Typical lunch fare, but not for us so it was a treat!

My family had some fresh fried smelts, with sweet potatoe fries! We always look so forward to going smelt fishing, and bringing them home and cooking them up right away, they taste sooo go fresh from the cold spring creeks!!Only get them in the spring!:) one of those fun traditions passed on to my kids from my childhood.

I had some leftover homemade Alfredo sauce in the freezer from my son’s birthday last week. Tossed that with some angel hair, and I roasted some asparagus. Garlic bread was on the side. Good time was had by all. :-)

ha. You know what I had? Your homemade tomato soup with homemade tortillas with melted cheese and pesto. The weather has been cold and rainy and I knew it was a perfect soup day!

This is just in case someone has never heard of this before. I was shocked when I read this and used mine all the time. I had to pay a little more to get a lead-free one, but it was worth it!!!

I love using my homegrown green beans that I can with any roast. I put them in about 2 hours before I serve it. I put it on the side in the juices. They are so yummy.
I had tea for lunch, been fasting.

We had left over bean hash. (Hamb. browned with onions celery and pork and beans added. With whole wheat bread and peach halves. Your roast looks awesome.

We had leftovers from dinner last night. I made a grass fed beef roast in the crockpot. :) We also had mashed potatoes, gravy and snow peas and carrots sauteed in butter with a bit of brown sugar thrown in. So yummy!

Mmmmmmm, I am SO buying lamb next week. We love it in this house, never really thought to put it in the crock pot like a regular roast though. Looking forward to it!

My son and I had leftovers. I cooked a lot of food on Saturday for company and always cook extra for the few days after that! I made a ground turkey meatloaf, baked mac and cheese, a homemade lemon garlic chicken pasta, and mashed potatoes. We finished off the potatoes last night. I had then made pasta cabonara (pasta, eggs, bacon, peas, garlic, and spices) two nights ago.
My son had meatloaf, chicken pasta, and mac and cheese with water. I had some pasta cabonara and water. It’s great to have yummy leftovers!!
