Between having lots of company and doing lots of traveling this summer…I have decided that my “menu plan” for the next few weeks needs to look a little bit different than it normally does. While I love to be organized, especially when it comes to feeding guests, sometimes a girl needs to be able to fly by the seat of her pants. Whatever that looks like.
Seriously, who comes up with these phrases? Go ahead…picture me. Flying. By the seat of my pants. In my kitchen. I’ll likely konk my shoulder on the corner of a cabinet door, ram my head into a watermelon and land with my elbow in the butter dish in the process, but whatever.
Instead of outlining my meals day by day…I’ve just made a list of meal and snack ideas to draw from. That way, depending on what each day holds, how many people I’m feeding, or what activity we’re running off to…I can pick and choose what food will work best for each day.
Breakfast Ideas:
- Whole Wheat Sourdough Biscuits with fruit
- Strawberry Shortcake (yes, for breakfast…look how healthy it is!!)
- Giant Breakfast Cookies
- Orange Muffins
- Scrambled Eggs, Smoothies
- Creamy Orange Cooler
Lunch and Dinner Ideas:
- Taco Potatoes
- Italian Roast Wraps
- Black Bean Salsa with Kettle corn chips
- Creamy Mac and Cheese
- Lambburgers
- Pizza
- Chicken Fried Steak Strips
- Spicy Avodado Dip
- Rice and Veggie Stir Fry
- Taco Salad
- Build your own Sub Sandwich
Snack Ideas:
- Watermelon
- Popcorn
- Chewy Granola Bars
- Katie’s Tater Skin Crispies
- Katie’s Power Bars
- Cheese and Crackers*

Hmmm, I think all our triscuits are leftover from Christmas sales =) If we ever clean out our cracker stash, I’ll look for some with seeds… Hopefully by 2011 when I might have time/space to consider gardening again! =)

Laura, I see that you use lamb in your cooking. This weekend, I couldn’t get my hands on any ‘clean’ ground beef, so I bought some ground lamb I saw in the store. I browned it up with some onions and seasonings, but it smelled awful. (I cook venison all the time, but the lamb smelled so strange in comparison.) I didn’t want to feed it to the guests we had, so I stuck it in the freezer. I’m thinking of using it with your sloppy joe recipe, hoping it will ‘hide’ the distinct smell I can’t get over. Does your lamb meat smell, too? Do you think the sj mix is strong enough to cover the smell/flavor?
Oh, and btw, I’m planning to purchase your character charts to help with the Compassion Intl. child.

Oh, that’s weird!! Our lamb doesn’t smell weird at all. It barely smells different than ground beef. Ours is a grass fed lamb from a local farm, maybe that makes a difference?!

I think I’ll stick with grass-fed in the future. ;)
