Menu Plan for the Week

With the hint of spring in the air…I’m having a very hard time wanting to make soup anymore.  (In fact, I’m so excited about gardening and the idea of fresh veggies and trying new things, that last night for dinner I made parsnips AND beets for the same meal.  Both of these were new to the kids.  It’s a good thing Daddy grilled steak.  The beets were good…but I’ve gotta figure out something else to do with the parsnips.) 

I’m a little bit out of control.  I need a little sunshine in my life.  I am SO hungry for ”summertime” foods like tortilla wraps and salads and cookouts.  The next couple of days are supposed to be pretty decent.  BUT, later in the week, we may even get snow.   I may need to trade in one of these meals for a big pot of potato soup.  I LOVE potato soup.  I just don’t want it anymoreI WANT SUNSHINE!!!  (Be glad you can’t see me kicking my feet and swinging my arms in the air while I scream that.) 

Here’s my “I Wish It Was Springtime EVERYDAY” menu…

Sunday, March 22
Leftover breakfast cake, fruit
Lamb roast, carrots, potatoes, gravy
Tuna tortillas, “angeled” eggs, fruit salad

Monday, March 23
Whole wheat waffles
Grilled cheese sandwiches, guacamole dip with chips, carrot sticks
Easy chicken alfredo, tossed salad

Tuesday, March 24
Fried eggs on toast, oranges
Popcorn chicken, creamy cole slaw, fruit kabobs
Cheesy beef and rice, green beans

Wednesday, March 25
Apricot breakfast bars, pears
Creamy mac and cheese, steamed carrots
BBQ chicken, ranch potato wedges, peas

Thursday, March 26
Scrambled eggs, turkey sausage
Garlic butter shrimp, stir fried rice and veggies
Meatballs, baked potatoes, steamed broccoli and carrots

Friday, March 27
Applesauce bread, bananas
Pizza casserole, tossed salad
Bean and rice bowls, fresh pineapple

Saturday, March 28
Breakfast burritoes, clementines
Chicken and cheese quesadillas, carrot sticks, strawberry-peach slushies
Fish and chips, tossed salad

And now…since I can’t have all the sunshine I want to have this week…I’m going to go pray for a contented heart.  Rejoice in ALL circumstances.  I can do that.  I can DO that.  I CAN….

  1. We love preparing mashed parsnips (instead of mashed potatoes)! We like them even better than potatoes. You can also mix them with some mashed potatoes, too, if you prefer. What did you do?

    Ugh, we had a high today of 68 and the high tomorrow is 38 with 100% chance of snow (2-4″) tomorrow day and then the same amount tomorrow night. Boo!! I was so enjoying my week of temps in the 60s.

  5. Add the parsnips to beef stew, just one or two. It is really good. Also, you can mash them with potatoes. There are several parsnip soup recipes that are good. I will say that winter parsnips are better than spring and summer.

    So Laura, when you post about why you guys don’t eat out much, could you pleeeeaaase :) talk us through what you do when you cooking yet another meal is the last thing you wanna do?? When a “Honey, let’s just get Wendy’s tonight” sounds like heaven! I, too, am committed to providing my family healthy food and we eat out rarely, but somedays (do you ever have those days), I just get weary of preparing and cooking and cleaning up yet another meal…so any encouragement or tips you’ve found for “conquering” this would be much appreciated!!     Not a fan of parsnips here. We’ve tried. But we do like roasted beets, the kids especially. And one of my husband’s favorites is roasted beet risotto.

    We’ve got spring in the air here too, but we’re supposed to get rain later this week. I also love potato soup and would gladly make it, but unfortunately, I’d be the only one eating it (my boys much prefer tomato). I haven’t tried beets or parsnips – had beets once in the hospital and they did not make me too excited. I’ve been seeing them a lot in recipes lately, so I might give them another go.

    Parsnips are ridiculously good slow roasted in the oven with a bit of olive oil and sea salt. . . (and are even better if you do them alongside a roast!) =)

    I would add the parsnips to a bunch of roasted veggies (beets, leeks, carrots, rutabaga, and turnips.) By themselves, I’m not a big fan but in something else, they probably are delish.

    I second the idea of mentioning how you handle the “I’m too tired to do one more dinner and kitchen clean up.” I find that by the weekend, I’m tired and cooking a full breakfast, lunch, and dinner the last thing that I really want to do.

    Parsnips are really good with a roast dinner. We have them every week. Put some oil in a baking dish (metal). Let it heat up in the oven. Add the peeled parsnips and cook until golden brown, turning occasionally. Unbelievably yummy ;)
