We walked into the house today after church to the delicious smell of pot roast. I quickly made gravy, and we sat down to eat. By the way, see that itty-bitty tiny amount of gravy? There wasn’t much juice in this roast for some reason, so our gravy portions were very small. But hey, how nice is it that our worst problem today at lunch was lack of gravy?
After this week, we will officially have two teenagers in the house. Justus turns 13 on Friday!
I was disappointed that last week I never got around to making A Moment With Mom’s Potato Soup. She is one of our site sponsors and not only does she share the occasional yummy recipe, she has lots of encouragement to share. Be sure to check out her blog! Here’s hoping I’ll get this soup made Tuesday as planned. :)

Hi Laura! I just made my big month’s worth of meal ideas. Love rainy Sunday afternoons. Anyhow, why does your plan always sound better than mine? (; Anyhow (again), regarding the Valentine treat, I had the same dilemma. Planned Rice Krispie treats, then strolling the aisles of the store, I realized I have everything I need at home to make chocolate cake, or butterscotch bars, or chocolate chip cookies….and there would no fake food marshmallows involved! And there will be chocolate! With I’ve cream. Thanksfor sharing your meal plan!! Happy Love week with your family!!
Alicia says
“I’ve cream”? ICE cream. Good grief. (;
Laura says
Yes, Valentine’s Day treats MUST include chocolate. :)

Just curious – how do you turn your leftover beef roast into stew? When I’ve made a roast, I always wonder what to do with it after the potatoes/onions/carrots are gone.
Thanks!
Laura says
Well, typically I cut the roast into bite sized chunks, and stir it all up with leftover carrots, potatoes, and gravy – then warm it all up. If the veggies are gone and it’s just the meat left, I usually just add bbq sauce and make it into bbq beef sandwiches. :)
Katherine says
That sounds delicious. I will back up my leftovers a step and try the stew. Yum.

We always have tomato soup and heart shaped grilled cheese for Valentines Day!

Last year I made brownies with sucanat and cut them out in heart shapes. Then I made a butter cream frosting mixed with raspberry sauce (just cooked frozen raspberries on the stove and strained!). It made a lovely, natural pink frosting to go in our brownie sandwiches! :)

We’re having chocolate fondue for our Valentine’s Day treat.

Happy early birthday to Justus!

Several of your recipes use buttermilk. Like you breakfast cookies and pancakes. Can I use the cluttered kefir milk instead and it still turn out good? Thanks so much!
Laura says
Yes definitely!

Apple Enchiladas!! That’s what I’m planning for dessert on Thursday! While you’re ending the week with a birthday, I’m beginning it with my youngest son’s birthday! Makes for a busy week, with Valentines’ and all! But lots of fun!!!

Hi Laura,
Still working on getting a weekly menu. Was going to inventory this past weekend, but got hit with the blizzard – NEMO (I thought they only named summer storms, guess not). Luckily I didn’t lose power. I live in Rhode Island – over 200,000 in R.I. alone lost power.
But I did make your banana muffins – they smelled good and taste good. I added about 1/4 cup of buttermilk (trying to use it up, and incorporate at same time). My sister came in and gobbled one down and I sent her home with a few…she loves banana bread (more than I do). She was pleased to have them, as she doesn’t cook or bake much (trying to get her to though) and she had been waiting 4 months for a banana bread from my dad, and he never made it for her (even though his is from a box).
I am slowly getting ‘REAL FOOD’ into her, even if she doesn’t do it for herself. (ha ha)
Thanks for the recipe and all you do.
Happy Birthday to Justus.
Susan

Laura, would you consider doing a post on your stoneware baking dishes that you use. I’m considering getting some very soon and would love to know from my kitchen “expert” all about them. Particularly if they are easy to use, clean and cook with. I’ve heard that they produce wonderful baked goods, but have never tried them. The cost has always scared me away before, but I’d like to get a few pieces to start with. I notice you do so much with them, so you’d be a great resource for information on these! Thanks so much!
P.S. I totally understand if you don’t have time to do a whole post on this! Thanks so much for your blog and the encouragement to strive for a heavenly home! I cannot even tell you how many recipes I’ve found here that have become family favorites!
Thanks and God bless!

I love stoneware! (Maybe I’ll try to post about this sometime!)
They clean up easily with just a rubber scraper and hot water. They do product great baked goods, for sure! My favorites are bread pans and a cookie sheet. :)

Thanks, Laura! :)
