We do a similar lasagna casserole for Sun. after church, but I like to assemble it and put it in the crock pot on warm, that way it is ready when we walk in the door! I usually have the sauce made on Sat. (and maybe even the noodles cooked), or cook the noodles quickly Sun. morning just before layering the ingredients. If they are slightly undercooked, then they can sit in the crockpot all morning and not get mushy. Sometimes I put a layer of ricotta cheese mixture in the middle, too.
I have a question about your beefy enchiladas – do you know of a source for non-gmo corn tortillas, or do you just go ahead and use the ones from the store? I haven’t been able to find non-gmo corn tortillas or even corn mesa to make my own that is not gmo.

Great idea to put it in the crock pot! I made ours last night and baked it before church this morning, and just turned the oven off while we were gone. I reheated it while I made veggies to go with it. May try the crockpot next time. :)
I use Food For Life Brand of organic corn tortillas.

I am working on gathering healthy foods for my family so that I don’t have to run to the store and buy one pound of organic dry beans or 5 lbs of organic whole wheat flour. Where do you get your bulk staples like these? I live in Atlanta, GA but have not found a co-op that bulk orders. Any suggestions would be greatly appreciated! Best, Whitney
