I may have to try your Coconut Flour Banana Muffin Recipe. I like coconut flour muffins (great flavor) but their consistency is a little wetter, it’s not the fluffy cake like texture that I thought it may be. Are yours cake like in texture?

Yes, I’d say that while they kind of taste like cake, they are a little wetter in texture. :)

I’ve made the coconut flour muffins many times for friends who are gluten free. They always love and appreciate them. They always turned out with a “wet cake” consistency. I’ve thought about experimenting to see if I could get them a little fluffier but I haven’t yet.
