We’ve been involved in a big soccer tournament all weekend – in fact, just now I dashed home quickly in between games to throw a roast into the oven for us to eat after all of today’s games. I thought that while I was home I could maybe get a menu plan figured out to share, but as you can see, I didn’t get very far. I planned exactly one day’s worth of meals. You’re all so inspired, I’m sure. ;)

Sandwiches, carrots, apples, dried fruit
Roast, carrots, potatoes, gravy, green beans
Beyond the tournament, we also have company coming (any minute now) which means that I probably won’t have time to write and share a menu plan later either. (I do know that I’m feeding company Sloppy Joes and Black Bean Salsa for lunch tomorrow before they leave for home.)
I’ll try to find a little time later to share new Funky Fresh Kitchen Challenge or recipe. Maybe? In the meantime, I hope you’re all having a lovely Labor Day Weekend!!

Here is my latest incarnation of sloppy joe’s…I like it the best of any I have tried before…Serves 12
Very Veggie Sloppy Joes
2 1/2 lbs lean gound turkey
1 large sweet onion diced
3 stalks of celery diced
1 medium zucchini chopped
2 green peppers diced
1 bag baby spinach chopped
1 15 oz can diced tomatoes
1 6 oz can tomato paste
2 cups tomato puree
3 T packed brown sugar
2 T cider vinegar
2 T Lea and Perrin’s Worcestershire
2 t kosher salt
1 T chili powder
Brown turkey and onion in olive oil in large stock pot. Add veggies and saute 5 minutes. Add tomatoes, puree, paste and spices etc. Cover and simmer 30 minutes over medium heat. Serve over whole grain buns or pasta.
You can also brown the meat and veggies, then throw in the crock pot. Cook on high for at least 1 hour, then leave on low until ready to eat.
When I make this, I do a double batch and freeze.

I haven’t really planned anything either. Didn’t find this post until today. We’ve had company too. My Mom, Sister and her kids (4 of them), for a total of 10 people to cook for. I used to be used to cooking for that many, but not so much anymore. Have a great week! God Bless : )

The sunburn reminds me… The kids and I frequent an early American homestead that has an aloe plant planted directly outside the kitchen door. Brilliant & (continually) inspiring. Perhaps potted for those who live north? Will typing this be the kick I need to get it done? LOL
