High Five Recipes: Justus’ Shaved Ice

 

High Five Recipes 2

I’m not sure how often I’ve emphasized to you how much Justus (my nine year old) LOVES cooking.  He wants to be a “restaurant worker” someday…he calls himself a chef (I am sometimes privileged to be his assistant)…and he really just can’t get enough of the kitchen.  He LOVES it.

Of course I love it too.  While the other boys mostly love to cook so that they can lick a beater, Justus truly loves everything there is about cooking.

He got a new cookbook for Christmas and has been waiting for a warm day to make the shaved ice recipe he found in it.  We adapted it to make it healthier (ah yes, I’m teaching him how to change a recipe already!) and here’s what he came up with:

Justus’ Shaved Ice

1 cup fresh or frozen peach slices
1 cup fresh or frozen raspberries
1 1/2 cups warm water
1/4 cup orange juice
1/4 cup honey

If your fruit is frozen, place it in a bowl with warm water (not the water mentioned in the above list of ingredients) for about fifteen minutes to thaw.  Drain.

Put fruit, water, orange juice and honey into a blender or food processor.  Blend until smooth.  Poor mixture into a 9×13 inch baking dish.  Cover with plastic wrap and freeze for about 6 hours.

Remove from freezer and allow it to sit on the counter about ten minutes.  Use a large wooden spoon to “shave” icy mixture into serving bowls.

The “bummer” about this recipe is that we had to wait for SIX whole hours before we could eat it.  Not much instant gratification there!  However, it was worth the wait!

All the boys (and the parents) loved this treat!  It was super refreshing on a hot afternoon.

And, of course, it’s a wonderful recipe to help you get another great serving of fruit.  (Are you taking the challenge?!)

    I love that your son is a “chef” too! Your post today prompted me to get the one done my little chef wanted me to write this week. ;-)

    That combo of peaches of raspberries looks so good. We have made something similar with watermelon, but I am anxious to try a new recipe. Thanks for sharing.

    Awesome! I can’t wait to try this! My little guy (2.5 years old) also loves to help in the kitchen…I hope he turns out just like Justus when he’s older.

    I made your whole wheat waffles for breakfast the other day and they were a big hit. I even had some blueberry sauce left over, which was great to mix in yogurt for breakfast the next morning. :)

    Hey, those look yummy! Try putting them in muffin paper and freezing that way. Maybe too sticky but we did that with fruit and yogurt it froze quick and the kids could pull them out one at a time. Mmmm!

    That looks yummy. I also want to thank you for your post on Money Saving Mom. I’m new to this coupon thingy, and I’m perplexed on how to save money AND eat well. We have a large family, I like to cook and experiment, so I’m sure I’ll be back to visit for some more ideas.

    Ours is in the freezer right now. We used strawberries and peaches. It will be dessert for tonight. The blender was leaking, so we mixed and mashed…shaved ice, chunky style!

    Hmmm, today is suppose to the hottest day this week (mid 80s so still mild but my goal this week is to keep the AC off no matter what) and I just picked raspberries from my bramble this morning. I know what I’m doing in the kitchen today! Thanks Justus.
