		<description>They should be just fine!  Worst case...the peaches at the top of your jar might turn brown.  They&#039;ll still be edible, they&#039;ll just not look as pretty.  :)</description>

		<description>I just bought your book and briefly looked through it for the answer to my question, but couldn&#039;t find it.  so I am going to ask.  I canned peaches today.  After processing, there is a lot less liquid than there was.  Most of the jars (That I thought I packed very tightly and filled with liquid) have about 2 inches at the top with no liquid.  I tried to remove air bubbles, but maybe I didn&#039;t get them all.  My question is, will they keep?  Should I open them, add more liquid and reseal?  Thanks!</description>
