I just bought your book and briefly looked through it for the answer to my question, but couldn’t find it. so I am going to ask. I canned peaches today. After processing, there is a lot less liquid than there was. Most of the jars (That I thought I packed very tightly and filled with liquid) have about 2 inches at the top with no liquid. I tried to remove air bubbles, but maybe I didn’t get them all. My question is, will they keep? Should I open them, add more liquid and reseal? Thanks!

They should be just fine! Worst case…the peaches at the top of your jar might turn brown. They’ll still be edible, they’ll just not look as pretty. :)
