This salad is super easy to make and super refreshing to eat. It is perfect for our Christmas Brunch!
Hawaiian Fruit Salad
Mix together three cups combination of any of the following:
Fresh or canned pineapple chunks or tidbits
Canned mandarin oranges or fresh clementines
Sliced bananas
Coconut flakes
Stir in:
1 cup sour cream
1 teaspoon vanilla extract
Mix well and serve. See how easy that is?!

Great idea! My littles won’t eat this if they see the sour cream. Would you freeze it as is, in chunks, or make it a smoothie texture for a Popsicle mold?

Flaked coconut is just regular shredded coconut. Both Bob’s Red Mill and Eileen’s make an unsweetened version. I find Eileen’s in the baking section next to the sweetened coconut and BRM in the natural food section of my grocery store.

I make this quite often, but haven’t used vanilla extract in it. Usually put a few drops of stevia in. Will try vanilla the next time.

I know Laura doesn’t usually like nuts but ours always had walnuts (and mini marshmallows but I don’t know a healthy source for those).
