I love to make avocado chocolate pudding! Yum! It's from Deceptively delicious cookbook. Tastes more like rich chocolate icing.

This sounds good too though. May have to try it soon.

Mmmmm. This recipe sounds a lot like something my daughter does at our fav Mex restaurant. She mixes a serving of guacamole with a serving of Pico de Gallo(sp?), then mixes in a coupla Tbs or so of their cheese dip (made from a Mexican cheese). I've tasted it and it's GREAT! Sadly, after a few bites, she then stirs that up with her rice, beans, and greens and eats it all together with a BIG smile! She loses me there. :-)

I love guac., but tonight for ease' sake, we just cut up a nice avocado into 1/2 in chunks, and put some into a bowl of fresh salsa...just mixed them right in. It was absolutely delicious! So if you don't have time to make guac., just chunk them and toss them into the salsa, and enjoy!

I have found that dipping celery sticks in avocado dip is almost as good as dipping chips! And much healthier. :)

hubby ATE this dessert...I don't know how you "at" something! Anyway, he ATE it and he LOVED it, even if his wife employed a bit of food deceit. Love ya, hon.

You know, go ahead and add a splash-dash (1-2 TBSP) of pure vanilla extract to the above recipe. Or if you like orange & chocolate together, add some food-grade orange essential oil.

I left a link
for the link-up
I think.

Here is an avocado recipe/idea you will have to try! Really, it is awesome. My hubby, who would run screaming from the room if an avocado touched his plate, at this dessert. Of course he didn't know what ingredients where whipped together. ;-)

- 2 small ripe avocados (or 1 large)
- 1/3 cup agave (or honey or brown rice syrup or pure maple syrup)
- 1/3 cup raw cacao (or carob powder)
- 1/4 cup water (more or less)

Place 1st 3 ingredients in food processor or K-tec (or VitaMix) blender. Process. Add water to achieve desired creamy consistency. Refrigerate if you prefer it cold.

Grab a spoon and yum it up!

Blessings all.

I can whip up one amazing salad!

Throw in some yellow corn
Chopped bell pepper
Chopped red onion
chopped green onion
Cubed avocado
cubed cucumber
toasted pine nuts
your choice of cheese (feta is to die for)
toss all in olive oil
pinch of salt
dash of pepper

Throw this mix over a big bowl of mixed greens.

Yum. I've had it for lunch every day for a month now.

:) I thought I hated avocados/guac until I tried Cheesecake Factory's guacamole! Incredible. The thing I like about it is that it still had nice chunks of avocado in it. I'm not a big fan of mushy foods, so when I make my guac at home (almost exactly like yours!) I keep some of the avocado in chunks and throw in some chopped cilantro too!

Raised in the caribbean we do eat a lot of avocado, even in place of butter, but I have been adding an avocado to my Juicer for added smoothness to the other vegetables. Believe it or not, it can substitute yogurt! Much love and great Juices!
