Eat More Fruits and Veggies Challenge: Check Point

Since we’re just getting started with this Eat More Fruits and Veggies Challenge, I wanted to touch base and see how your day went!

Our day started out with fresh strawberries and whipped cream on top of whole wheat waffles

Oh boy, were these good.  Or so I was told.  I decided to wait to eat until I read the boys’ Bible lesson to them.  By the time I was finished, there were no strawberries left…no waffles left…and the whipped cream could barely be scraped out of the bowl.  Don’t worry, I’m used to it.  :)

Instead I ate a clementine, which I eat almost every morning anyway (either that, or an orange).  Then, mid morning I had an apple.

1 small clementine – 1 serving
1 apple – 2 servings

I told the boys about the challenge and well…anything that has to do with competition, challenge, sport, race…they’re all over it!  They’ve been counting their servings all day long and eating extra carrots to make sure they get a big enough serving…  It’s been great!  I should have “challenged” them long ago!

I loaded up on a bunch of veggies at lunch with my sloppy joe.  It’s amazing how easy it was for me to get FIVE whole servings at lunchtime! 

3/4 cup creamy cole slaw plus 2 bell pepper spears - 2 servings
6 baby carrots – 1 serving
1 cup green beans – 2 servings

That’s eight servings by two in the afternoon!  It was painless (and actually quite delicious!).

For dinner I changed my menu plan a bit (how shocking!) and made chicken fajitas instead of enchiladas.  There were peppers, onions and salsa in my fajita…but altogether, that was still only one serving.  In order to get one more serving into all of us, I made delicious strawberry-peach-chocolate milkshakes to go with dinner.  Oh…the joy of forcing down fruit in a milkshake!  I’ll be sure to share the recipe soon!

Total for today – 10 servings of fruits and veggies!!

I doubt I’ll be able to hit that mark each day…but who knows?!  It wasn’t hard at all.  I’ll check back in with you later in the week to see how things are going.  In the meantime…anytime you want to, come check in here and leave comments answering the following questions:

    Lau-RA! No fair! I’m just to the point of thinking about how my grocery list needs to look. Umm, I know I had 2 servings of green beans, and do mashed potatoes count? That might be a stretch. For right now, I think I’m going to drag myself over to the stove to make some ramen noodles and carefully avoid the cookies. And something tells me Vegetable Thins crackers don’t count – probably espeically since they aren’t shaped like vegetables anymore. Well, I made my intentions public on my blog, so that’s how I’m doing. :>)

    Hey…two servings of green beans is great. And mashed potatoes…I say they count. I know they aren’t as great as other veggies, but I LOVE potatoes, so my rule says they count. :)

    AND…you’re right…it isn’t fair because I was planning ahead to do this challenge and none of the rest of you knew about it to plan ahead. I promise not to eat 10 servings tomorrow. :)

    Hee. I DID manage to chow down on at least a cup of spaghetti squash plus marinara sauce, so that’s not too bad.

    PS – I got the button to show up fine . . . but the rest of my post was all a link to you after it. :>) I’m thinking it was something I did as I was dinking around. I’m cool like that.

    Great job Laura! I like the ‘check point’ because accountability is so worthwhile. Writing down what you eat makes a big difference. As you can see below, we did fine with fruit, but we need improvement in the veggie dept.

    Laura, I just really got started today. I didn’t make my meal plan for the week in time (busy weekend with family visiting). I will be putting up my weekly menu and letting people know a checkpoint as well on my blog. Anyway, yesterday was not good except I did have celery in my chicken salad sandwich! LOL! My dinner I had green beans. Dessert was strawberry shortcake, yum! I have a lot to work on mainly because I rarely eat lunch and breakfast. Mine will be baby steps!! Thanks for keeping me accountable! AWESOME! :)

    It was a stressful day and I didn’t get in as much as I would have liked but I did raid the vegetable crisper and rescue some mushrooms that probably would have been ignored until it was too late – I found a great recipe in the Joy of Cooking for marinated mushrooms – they were really yummy! This challenge will hopefully help me to keep from having so many veggies meet an unpleasant end in the back of my veggie drawer in the fridge.

    Those strawberry topped waffles look delicious! I have some strawberries in my refrigerator and I was planning to just eat them plain…but I think I’ll make some waffles to go with them in the morning. :-)

    I have to chime in on the Kimchi. A few years ago we visited my brother-in-law who was stationed in Korea. While there we spent the night with some missionaries on an island where very few Americans have set foot. The locals were SO friendly and went out of their way to offer us foods they loved, and lots of them. That is how I first made myself try sushi. It was brought fresh to the missionary’s door just for us so how could we even hint that I have a total aversion to any uncooked meat! It actually wasn’t too bad. The next day the church had a communal meal after the service which included lots of spicey kimchi. We managed to get it down which they apparently took as a sign that we loved it and kept heaping it on! I really appreciated their generousity, but confess that we still joke about kimchi.
