Eat More Fruits and Veggies: Ah, the Variety…

My dad only likes three vegetables:  green beans, corn and peas.

(And he’ll only eat peas every other month on the fifth Friday…if it’s not raining.)

So, growing up, my mom only made three vegetables:  green beans, corn and peas.

When I got married, I knew how to make three vegetables:  green beans, corn and peas.

After a few weeks of serving my husband only these three vegetables with every meal…he lovingly suggested to me that there were other vegetables that existed out there…and…could we maybe eat some of them?

Hm.  Never had thought about it before.

So, I slowly started to learn about cooking other veggies…and I learned that other veggies were yummy!

I’ve tried to introduce a wide variety of veggies to my kids…and they do pretty well…although we still have our vegetable fusses and fits…and sometimes they have to resort to dipping their veggies in ketchup to get them down (why they think that tastes better is beyond me…).  :)

Now though, because of the Eat More Fruits and Veggies Challenge…I’m excited to expand our fruits and veggies varieties even more!  There is so much beautiful, delicious produce available to us…and all of it offers an amazing variety of vitamins and minerals!  And the more we eat…the better off our bodies will be!

So…we’ll see what I might come up with in the next few days!

I REALLY am enjoying eating all these fruits and veggies…and have found that once I have put my mind to it…it really isn’t too hard to meet the Challenge!

    Well that’s about the same as my hubby- just three different ones. Broccoli, raw carrots, and spinach (and only if the spinach is “hidden” in something like lasagna or pizza.) He likes corn too, but we count it more as a starch than a veggie…

    Ok, so it OBVIOUSLY runs in the family, at least with the men. B will only eat those same 3 veggies, Laura! Well, he’ll eat carrots and salad, too, and he thinks that potatoes count as veggies. But, I wish he’d eat mushrooms and broccoli and spinach and peppers and…but, he tells me, “I’m 38 years old, and I KNOW what I like!”

    I’m going to try REALLY hard to introduce our baby to lots more foods than what his daddy will eat!

    Sally…on our trip everytime I suggested getting a veggie with dinner you made FACES at me!!!!!!!!!

    Oooh…lets get carrots with our chicken satay. *nose wrinkle*

    Ooooh…lets get a brocolli, cauliflower, mushroom omelt. *Gross*

    Oooooh…lets get sun dried tomato pasta. *No way.*

    hmmmmmmmmmmmmmmmmmmmmmm. Was that just a pregnant moment(s)???

    We are doing…ok…with the challenge. I made a soup last night full of carrots, corn, and potatos…and we had that for lunch today too. And we have had bananas and strawberries around. I eat a lot of whole wheat bread though. I need to eat more veggies. I’m trying though…thats the challeng part right???

    My boys will eat broccoli and cauliflower, and that’s it. I do a lot of hiding–chopping or pureeing things so they don’t notice. Sometimes I can convince them to do celery/carrots, but I’m pretty sure that the amount of ranch they use for dipping negates any value! My new favorite veggie dish is steamed green beans that are tossed with olive oil and italian seasoned bread crumbs and canned arthichoke hearts, and baked for about 30 mins.
