Easy Chocolate Banana Bread

Serves: 1 loaf
- 1½ cups whole wheat flour (I use freshly ground soft white wheat)
- ⅓ cup sugar, brown sugar, or sucanat
- ⅓ cup cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
- 1 cup mashed over-ripe bananas (about 2-3 bananas)
- ½ cup sour cream or plain yogurt
- ⅓ cup melted coconut oil or butter
- 2 eggs
- In a large mixing bowl stir together flour, sugar, cocoa powder, baking powder, and salt.
- Add mashed bananas, oil, sour cream and eggs.
- Stir until ingredients are well combined.
- Pour mixture into a buttered bread pan.
- Bake in a 350 degree oven for one hour or until a toothpick inserted in the middle comes out clean.
