Do you want to know my thought process for how the Week of the Chicken came to be, or would you prefer to be blissfully ignorant of how my brain works?  (Keep reading at your own risk.)

It’s really not a very exciting story – I simply got a lot of chicken at a good price last Thursday.  Smart Chicken brand is the only brand of chicken breasts that I can get locally that I (mostly) trust, but it tends to be very expensive.  When my friend Emily informed me that it was on sale for just $2.99/pound - I was out the door before my shoes were tied.  What can I say?  We’ve been chicken nugget deprived as of late, and the homemade barbeque sauce could wait no longer.

Back at home with many, many packages of boneless, skinless chicken breasts – while making plans as to how I would use it all, I thought to myself, “Well this is sure going to be the week of the chicken”.  And there you have it.  The Week of the Chicken idea was born.  I decided that if I was going to have a Week of the Chicken, I was going to drag you along with me.

In light of this important announcement, I suggest that you cancel all appointments, and in general, block out every day this week so that you will be free to schedule every moment of your life around the chicken.

Because I’ve been so busy preparing to make the Week of the Chicken everything we could all hope for it to be, I did not write out a menu plan for this week.  Blame it on the chicken. If you need some menu plan ideas, please click over and read through all of my menu plan archives (which is what I’ll be doing this week – unless, of course, we end up constantly eating chicken!).

We pray that Learn Your Letters, Learn to Serve is a blessing to your family!

Since then, my husband has been spending hours carefully packaging all the bottles.  He loaded up as many as he could on Tuesday, and made a trip to the post office to send off the first round.  And then he came home – with all of the packages still in his possession.

Very long story short, because trust me, I had typed out the whole stinkin’ story before realizing, for Pete’s sake, you really don’t want to read all of that:  Each vanilla bottle must be sent in a box, no exceptions.  This is actually probably a good thing because some of our vanilla bottles got crushed the last time we sent them – even though my husband had wrapped them so thoroughly in bubble wrap and then packaged them tightly in bubble envelopes.  So boxes for our vanilla are a good thing.  And wow, even though I cut out the long part of the story, here I am still rambling.  Best post you’ve ever read, eh?

Anyhoo, Matt has now been repackaging all of our vanilla bottles.  And, because we are trying to save on costs, as well as trying to do our part in reducing waste, we simply went to the grocery store and got as many boxes as we could for shipping purposes.

This is why your vanilla may come in a handsome Glad Sandwich box or Ziplock box or who knows what kind of box.  See how professional we are?

That’s just one corner of our living room, by the way.  As Matt gets the bottles boxed, it is becoming less and less possible to walk out our front door.  If you don’t hear from me in a few days, it may be because we were overtaken with vanilla boxes, otherwise known as Vitacost, Reynolds, or Dawn boxes.  And oh look, there is even a shoe box we found.

In addition, some of you will open your random box and find that your vanilla is still packaged in a bubble envelope.  That’s because after Matt learned that we can no longer send vanilla in these, he didn’t feel like opening them and repackaging them.  So, your vanilla should be nice and secure, and it will be like getting a gift inside of a gift.  Won’t that be fun?

Our vanilla is absolutely pure, with nothing added.  Read how we make (and how YOU can make) homemade vanilla extract in this post.  Because we use a large number of vanilla beans in each batch and allow our vanilla to sit for six months, this vanilla is double strength, which means that you can use half the amount called for in a recipe.  Yes, that means that each bottle of our vanilla will last you twice as long as a typical bottle of vanilla!
