Continuing on the quest to eat more fruits and veggies…I came up with this recipe.
And OH MY! You MUST try these!
When you eat them…just know that they are a little messy and drippy…
But you’ll get to enjoy licking your fingers and slurping up all the good stuff off of your plate and savoring the flavor.
(Or, if you want to…use a napkin…but really..that is not nearly as fun.)
There’s a bit of everything in these: sweet, spicy, crunchy, creamy, meaty and cheesy.
Chicken Veggie Quesadillas
1/3 cup chopped red bell pepper
2 T. chopped onion
1/4 cup chopped sweet green chili pepper
2 T. olive oil
3/4 cup corn
1 cup cooked chicken, cut into bites
1 medium tomato, cut into bite sized pieces
3/4 cup grated cheddar cheese
3/4 cup sour cream
1/2 t. chili powder (more or less according to your taste)
10 whole wheat tortillas
Saute peppers and onions in olive oil for 3-4 minutes. In a medium mixing bowl stir together corn, chicken, grated cheese, tomatoes, sour cream and chili powder. Fold in sauted veggies.
In a skillet, lay down one tortilla. Spread filling onto tortilla and top with a second tortilla. Cook over medium low heat for about one minute on each side, or until filling is warm and tortillas are slightly crispy. Continue until all tortillas are filled.
Cut into wedges with pizza cutter.
Now, go make these chicken veggie quesadillas, grab a napkin (or not), and dig in!

Hi Laura! When I make this, or any chicken that is made along with taco seasonings, I cook the chicken up in the crockpot. I just put how much chicken breasts that I want in the crockpot. Just cover it with water, add a bullion cube and 1 or 2 tablespoons of taco seasonings. This way, the chicken is already flavored for taco salads, quesadillas or tacos. I dont know how long I cook it, I just keep an eye on it. I never have extra chicken on hand, so that is why I do it this way.

I love learning new recipes! Sometimes, especially when you are unsure if you will like something and don’t want to write it in a recipe book until you are sure, it can be hard to keep up with all of the new recipes you are coming upon. I started a favorites under my favorites on my internet…all you have to do is click the favorites tab in the top of your internet, click add to favorites, then i started a new folder called recipes. This way, I have all the sites in one central location!

I made this tonight. It was great. My husband who normally doesn’t like mexican food loved it too. I did do a bit of substituting .. I mixed everything together on the stove while cooking my chicken and added heaving whipping cream instead of sour cream (didn’t have sour cream on hand). It came out really good. Thanks for the recipe.

We are trying to eat better so this sounds wonderful. The veggies are hidden in the quesadilla so husband won’t know exactly what is in it. Doctor told him to eat more fruits and veggies and lean meat. This fills the bill.

I usually cut each into six triangles, so for 10 tortillas made into 5 quesadillas, that would produce about 60 triangles. Sorry I’m a little late answering. :)

This is one of those “Now why didn’t I think of that!” moments! My kiddos love chicken quesadillas and they love bell peppers on their pizzas. Can’t wait to surprise them with this for lunch today!
